You are only seeing employed woman. Woman who worked on their own farms (or labor farms) aren't counted as part of the workforce, since they are working their own land. Most of the other woman who worked in the cities were primarily black woman and immigrants from ireland, italy, and many other european countries.
Now you are acting like farmers weren’t documented tax paying workers come on.
PS. Working on a family farm back then was no different than taking care of your house and kids. It came with the territory. Those women were STILL housewives pretty often.
