have never had an issue with a PSU before, mine is like 4-5 years old now so I guess that could be the issue

Did you try the bolded part?
poe requires 4gb ram so 8gb is fine
I doubt it's ram but run memtest as suggested
sounds like psu or hard drive error, try installing poe on a separate hard drive, try powering video card from a separate psu to test
Also: when it crashes, restart and read the event viewer;
Click Windows Start button > Type event in Search programs and files field.
Select Event Viewer
