Well you are right about the higher avg fps. But with crossfire you will be adding microstutter/inconsistent frame time, which is horrible in competitive games such as Overwatch and Fortnite.
Before mentioned games with run 70-100fps maxed out at 1080p. Tinkering with the settings like dialing back useless stuff like shadows and post processing(for these games) will fast yield the 144 fps.
In League of Legends the FPS will be 144fps maxed out 1440p.
I would rather trade 50 fps from 144 fps to gain a consistent frame timing.
