Take steak out about an hour before cooking it, never buy a steak that’s less than 3/4 inch thick.. Hit that joker with plenty of salt, I like kosher. Let it sit for at least 30 min with the salt, sucks out the moisture from the surface which allows a good crust.

Set oven temp to 350

2 tbsp butter in a burning hot cast iron pan

Place steak in pan and cook on one side for 5-7 min or until nice and brown/crunchy.

Flip that bad bitch and place a sprig of rosemary and a clove of garlic. Let cook for 3-5 minutes than place in the oven for 5 minutes. After it’s done, give her a lil bath in butter by spooning it over the steak.

Let the steak rest, than slice up and enjoy.

Yah and you do whats called basting over the steak with a spoon to keep the moisture flowing over the meat. Delicious.

I'm not super picky as long as it's not too red inside. I also prefer it simple with salt and pepper so you can taste the steak. As long as its cooked well you're good to go.

temp for me depends on the cut. Filet/tenderloin/strip/ribeye/hanger/t-bone I like mid-rare. everything else mid-well and a few other cuts I like blackened
