Set temp of oven to 350
Heat frying pan to steaming hot oil.
Salt and pepper both sides of the steak
Sear one side until it looks sexy
Flip steak, cover, put in oven for 4 minutes.
Remove from oven add 2 tbsp butter
Add minced garlic, fresh rosemary sprig , and thyme
Baste the steak with the buttery garlic rosymary thyme goodness with a spoon about 200 times.
Serve .

Cook the meat on low heat then sear the outside at a high heat afterwards.

this, its the best. gonna reverse sear some 54 day aged steaks tomorrow. smoked then seared. should be awesome. ive got a 'control' steak, too, cut from the same rib to compare.

i miscalculated, it was 57 days....

aged on the left, unaged for comparison on the right.



smoked for about an hour to an internal temp of 128, then seared one min each side.

came out fantastic. definitely a noticeable difference from the unaged.
