its stable at 1 ohm
figured i could use it the some as a 2 channel amp, seeing as this has two channels, but I'm guessing all that is, is one + and one - split into two, making it easier for one to hook the subs up

Yup. I would hook it up @ 2 ohm though, and not .5ohm.

well, instead of getting a higher output amp, wouldn't it be smarter to get two of the dual 4 ohm subwoofers so that it would allow me to run them at the 1 ohm load, letting me use the same subwoofers and amp?

If the amp is 1 ohm stable, yes.

i can't find the exact statement that says so, but the last crunch amp i had gotten was stable at 1 ohm

And now i'm pissed, i bought the KIV-BT900, and for some reason i can't find the audio/speaker customization for it
