Scientists are 100% capable of falsifying data, which is why you don't rely on one experiment to make a conclusion. You rely on several experiments from different labs. If you publish a result, and 3 other labs try a similar experiment and can't get results then your paper is basically ignored because nobody can build on it.
The real science classes have laboratories associated with them is so you can do exactly what you advocate for. You do the labs, collect your own data, and usually re-derive the theory you were taught in class. You aren't blindly given your world view in science classes, you are allowed to derive it yourself.
Similarly, when you read scientific publications you don't just accept their data. If you have data that conflicts you will cite their paper and basically say "this conflicts with this data and we think we are right for these reasons" and it will be discussed and figured out who is right.
Nobody in science takes things at face value. If you've ever been in a meeting with researchers you'll find out pretty quick that if your data doesn't stand up to scrutiny you will get grilled to death.
