Why do people waste one of the best fish by smoking it?
I've never in my life smoked salmon and I constantly frown upon people for doing it.

its not a waste if you like it....

why waste a good piece of salmon by using granulated garlic instead of fresh? (otherwise similar to a sauce i make.)

The powder doesn't over power like fresh and most people have it vs fresh. I don't use a lot of but that recipe is pretty much a base so you can add or take away what you want.

Iono I guess have always liked fish and prefer it to be as "right out of the water" as possible. I like smoked razor clams, smoked tuna, and other stuff but I just like the fish to be flaky.

Deer jerkey and other game jerkey is a really good treat.
Iono I'm just weird I guess lol.

what, the jerky? it wasnt smoked, i just use liquid smoke in the marinade. its not specifically 'bacon' flavored, or cured like bacon. it just comes out with a somewhat similar flavor as the flavorings are inspired by a maple flavored bacon.

i thought you meant you smoked your own bacon :P but you talk about bacon flavored jerky right ? or am i too dumb to understand now lol

I like it too but I love salmon.
Maybe it's because I live on the coast and have access to 10+ rivers within 15 miles of my house.

To me salmon is just too good of a fish to smoke it.

I hear ya man, I like what I like and don't need someone to tell me otherwise.
Have you had steelhead before? Friend and I caught about 40lbs last winter, he smoked almost all of his and I vacuum packed mine.
I absolutely loved it smoked, was the first time I was for smoking fish.
To me it just comes down to the person who smokes it I guess, my uncle has been smoking it since he was a kid and has one of the best recipes I've tried but he won't let anyone know.
I just don't want to ruin a perfectly good fish ya know.

havent done my own bacon yet, tho i want to. i meant jerky inspired by the flavors of bacon. (maple glazed bacon, speciffically.)

made some flanken/short ribs yesterday. smoked for two hours, then in the oven for two hours with a maple hickory bbq sauce glaze for the last half hour. forgot finished pic, but mmm... (heres after smoking.)
