gotta play catch-up a bit here, neglected posting a few things, plus i gotta post tonights dinner. thatll have to be a separate post tho.


cheesecake with a bit of lemon and orange zest, oreo crust, topped w a lil ganache for looks. absolutely incredible.




chili con carne con duck proscuitto. delicious.




grilled wings, grilled beer-battered onion rings, grilled corn, grilled zucchini. how can grilled be bad?

and now for tonight's dinner. i picked up an anova circulator recently, so i used that for a couple things:

A dish I call BEEThoven's 5th. Golden/reg beets, bunapi and brown beech mushrooms, maple-balsamic reduction, Thai basil oil, orange zest, shaved chocolate, and pea shoots. The beets were cooked sous vide then finished on the grill. I underestimated the spacing a little, oops, but while I'm not usually a fan of either beets or mushrooms, but this was good...




We also had brisket which i cooked sous vide for about 24 hours at 135 then smoked for 3.5 hours. So soft. So juicy. So delicious.




To-go version of the beets for my wife since she had to leave for work.

eh, my presentation needs some work, but some of them are good. taste is always excellent tho...
