Take it a step even further than that... China's proven they're capable of nuking the US now. What makes you believe that if we launched vs Russia, China would not launch vs us? Remove Russia and the United States, make the assumption that Russia has already decimated the majority of European Nato nations, where does that leave us?
You haven't thought things through, mate. :)
A few things.
1) Whether or not every country outside of NATO decided to side against the United States is irrelevant to what we're discussing. A nuclear attack by Russia on NATO would invite a retaliatory nuclear attack on Russia. Russia cannot win a conventional war with the United States, and trying to win a nuclear war against three nuclear powers is not a conflict from which you can emerge victorious.
2) Japan is a firm US ally both in terms of history and via necessity. The Chinese hate them, and the Japanese hate the Chinese back.
3) In your hypothetical, China would be destroyed.
