If they wanted to, they could open up another front in Poland, Moldova and Romania at the same time if they wanted, and still only use around 50% (or less) of their military forces.
It should also be noted that Ukraine had the biggest army in Europe and they have already been neutered to the point they cannot even engage in serious counter offensives. Now imagine what Russia could do to a country with an even smaller military than Ukraine.

INITIAL troop levels were approximately 1/6 of the total Russian military - including naval and air forces (140,000 out of 900,000). Since then, they've experienced massive casualties and had to draw fresh troops from across the empire to reconstitute combat-effective units (a loss of 1/3 of a unit's manpower is generally considered a depleted and non-functional unit). Their armored spearheads have been so shattered that videos of Russian trains carrying ancient T62s for replacements are all over the internet. Russia does not have the logistical support to change force posture to war with NATO.
