as with all things in the US we've gotten efficiency to the point that quality drastically drops.
most supermarkets here have a bakery as well but almost none are scratch bakeries. they order frozen loves of bread, they defrost over night, then quick proof them before baking them off. its better than some bread in bags they get shipped in pre-sliced but its dogshit compared to scratch baking. (source: worked in american supermarket bakery for 3 years on college)

100%, and true with pasta as well. i take eggs from my chickens and make homemade pasta for people, they cant believe that it's the same ingredients as boxed pasta. the freshness is a world of difference.
