I did do a pretty big automation project a couple years back that runs at one of our other plants.
Kinda break fix and help desk for the most part, until my boss assigns me some actual network admin duties.

Like write up the problem and how you solved it. Idk how your line of work works.
But I've kept all my work orders and write down any problem/potential fix on them along with some measurements for later use.
Also I've got a huge stack of papers to show a new employer lol

My resume has my schooling, projects and achievements.
I edit it every now and then. I have really no gaps and not too many employers so it's easy to fit things in.
I use a mental ticket system and its organized chaos in my head with parts.
