What consoles do you have? If you own a Switch, Pokémon Sword and Shield are very beginner friendly, an easy way to get used to the games, while still possessing end-game online battles, that takes some time approaching. If you own a 3DS, Pokémon Alpha Sapphire and Omega Ruby are great entries, Pokémon X and Y are also good entries. All games are easy to get into. Each new generation has a certain new gimmick, that's associated with that generation. There's also older games, which will require a 3DS.
I would definitely recommend Pokémon Sword & Shield.

Try pokemon snap and stadium on n64! Stadiums a ton of fun. And i put in many hours on snap. They actually have a remade snap coming out for switch now.
Also pokemon red and blue. And pokemon yellow pikachu on gameboy color

If you don't have a console to play then just download a DS emulator and play platinum or emerald with a GBA emulator. If you want older style crystal is the best game before the GBA games, though yellow can be fun.
