na do 128 gb ssd for windows

other 1tb ssd for everything else

then if one dies u still got it there

1tb hdd for everything else.

Remember to chance to AHCI in your bios before installing the new SSD.
Honestly considering how cheap are SSD's nowadays I'd go double, one for OS + softwares other for data. Don't get small SSD, doesn't worth it and are slower than bigger ones.
Fresh install is always better than clone. You'll spend one day or two settings everything back and reinstalling your softwares but totally worth it.
If you got m2 slot go for NVMe SSD as primary.
