I will make an iron golem from an ethereal beast for my summoner
if i put on high + lvl gear and make him (for example a 50 skill point golem) and then switch back to my normal gear (lvl 40 golem) will my Iron golem remain lvl 50?

iirc, that is correct, however when you join a new game, the golem goes the your level of when you join. (im pretty sure i read that one time)

so they say equip your highest gm/golem skills prior to leaving the games.

if im incorrect, someone let me know.

Beast should be on necro hand. Try a Pride IG instead.

It would probably be better to focus on golem mastery, since all you are looking for is the survival of the golem.
Points in iron golem however arent increasing his survivabilty.

Also as stated above, iron golem stats gets adjusted every time you enter a game, so you should exit every game in max golem mastery gear.
