You can do one of two things.

Be general with your champ pool; have 2-3 champs you're really good with, and have 3~ to back up on.
Pros;
You get to know a general idea of most champions / styles and how they play
First pick you can pick a safe champion. Second pick guarantees a counter pick.
Playing different champions every few games is refreshing rather then one.
You're much more flexable to the meta
Item / champ changes will not effect you as hard

Cons;
Master of none
Hard to climb with more champions because you dont have high level experience with a single champion
Might have to take time to learn new champs
Don't know matchup very well

OR

Be specialized and play only 1/2 champs.

Pros;
One tricks give you a huge understanding of matchups and lanes.
Understanding your champion to the full extent.
Easier to climb

Cons;
Not flexable. Might have to play into bad matchups or play into a bad team.
Hard to join teams
If banned, you're forced onto 1 champ or something else you dont play often.
Meta changes effect method HUGELY

I main lux and anivia.
People start playing and banning lux, I'm forced to play anivia.
I have a few other champions I can play, but I'm really onetricking anivia atm.
Assassin / Long range meta is not nice to bird.
So until the meta changes, I have difficult lanes. So I'm playing support a lot too as it's my off roll and really doesnt change that much.

jungle usually, playing a champ u can control/force the fights when needed
and solid communication to ur team

then ur not playing to ur champs weaknesses, u gotta either shove to their turret while minions are in middle of lane or freeze on ur side depending on the matchup, and while u dont have anything to farm, either roam to help take scuttles or take wraith/wolf camps from ur jg
