In short, sodium does a lot.

Its required in neurotransmission, blood filtration by the kidney, maintaining osmolality (which maintains blood volume among other things), etc etc

Its required for virtually every process in your body in some way or another.

As for excess sodium levels, it can exascerbate heart disease, but outside of pathological states and excessive intake your body is really good at regulating it, so its not a huge concern, however it would be best to review the scientific literature for the specific disease or process you are interested in to find the implications for human health.

Excess sodium is only bad if you have no potassium to balance it out. Your body rids excess through the kidneys. Tomato juice, spinach, bananas, and coconut water all have huge amounts of potassium.

So potato's and Banana's are potassium right?

I don't eat excess tomato because of acid reflex.
