My level of understanding of Energy Shield and exactly how it works is quite low. I get the basic concept of what it does, but why/how would 1 point into ES help this build? Just looking for elaboration.

Manashield uses a part of your mana instead of life when you get damaged physically, so you use your unused mana to eat dmg and mana gets refreshed quickly by warmth and afaik you dont need it on zealer side.
I would just consider it for more tankiness but i have no idea if this weakens the build vs manaburn mobs too hard or on nova switch. This was just an idea

Yes. If you can handle mana burn mobs but i have no idea if this is possible.

Well I’ll have max block and 45% DR if I go with Shako/SS setup or 10% DR + some integer damage reduction if I go with Shako/Gerkes setup. I hope this allows me to tank fairly well.

Similar to my next build! I'm not using nova or zeal, but it's a different twist on a chant sorc. Looking forward to following yours once you get it going!

Seems like this build would have shit resists???
Gear would give no more than 70 at most and in hell u have -100.

also, if you need str for gear, dex for max block, and no cta, what does the sorc health pool look like @lvl 80 headed into hell?

There are lots of ways to make up for lack of resists on gear, like charms, tri-resist boots, jewelry. Currently running a Fendzon that has similar resist problems but I’ve been able to circumvent this problem by saving resist charms and looking for jewelry with resists.
