So i have my merc on my trap assassin that has infinity (-46 light res) also i have a griffon eye which i want to put on him, will it add the -17 light res as well?

Does this factor in to my equipment as well, like does it stack?

Also does infinity help with all elements? im thinking about putting one on my ice sorceress.

Only the Conviction slvl 12 from his Infinity will aid your light damage. Any sort of direct +%LSD/-%ELR will not help you, whether it's on your merc or even your own character's equipment.

Infinity works on all Elements. Mind you, Poison/Magics/Physical resistances aren't elemental resistances.

No it will not. Traps are minions and hence are not aided from RBF or other sources of direct +%LSD / -%ELR.

Only Lower Resist curse / Conviction can aid you.

does it work with fire res? or only lightning?

Most CI's have enough cold resistance to counter -85% and stay immune.
