Anything super acidic breaks down meat. They sell a substance of sorts called "tender quick" I usually use because it's got that unique homemade jerky flavor that it brings to the table

So when I learned that ceviche is cooked by just putting citrus on top it blew my fucking mind. Although I can't eat most seafood. Was just super cool to learn.

Was a success. Better in chew and favour than the ones that I can buy ready made here.

Strong flavor, chewy but not too chewy
