I'm looking specifically for AI user generated content / influencer marketing for social media.

More specifically, I want content like this:

I have a brand that I want to make some content for, with a CGI girl holding and posing with the product.

Anyone in this wheelhouse?

I believe that is heavily filtered imagery of an actual person.

You can create an AI generated character and keep recreating that character in different scenario's but unless you get good at photoshop it will be difficult to place specific things within the image. AI art is trained of data sets so if your product isn't in the data set you'll have to photoshop it in.
