Which of the other 1000's of other gods has claimed to be the creator of the Universe? The many Greek gods are gods of something in particular. Whenever something new came up then a new god was established. I would like to know which of the many gods challenges the God on the Universe when it comes to that blade of grass?
You have an army of over 1000 gods to choose from to our only one.
Ignoring (mostly) religions closely related to the "Abrahamic religions" (e.g. Islam, Judaism, Rastafari, Baháʼí, etc.), here's a few:
Sikhism: Waheguru. Zoroastrianism: Ahura Mazda, Druze: God (somewhat close to Abrahamic). Mandaeism: Hayyi Rabbi.
Atenism: Aten. Tengrism: Tengri. Cheondoism: Haneullim. Cao Dai: Cao Đài. Eckankar: Sugmad.
Meivazhi: Ekam. Seicho-no-le: Jissō. Mitraism: Mithra. Mogyo: Hanulnim. Yazdânism: God.
Zurvanism: Zurvan. Kashmir Shaivism: Shiva (some interpret as monotheistic)
There a many, many more. All of this is to say, if you look into it, you'll find many monotheistic, and psuedo-monotheistic, religions that overlap with the creation story of Christianity.
