I'd like to create a PvP compilation in the future. If I only use the instrumental version of a well-known song, do I need to pay for a license on YouTube?

Yes. They will ask you to remove the audio if there is even a hint of a song or its melody that is copywritten. There are unhinged people who copystrike content creators. Best is to try to make your own songs/sounds with samples or look for free to use audio tracks.

i would stick to royalty free music. they have an auto flag system so if its someone well known it will prolly auto flag, at worse it could be a strike on your channel at best they just take any profits video may get in the future
