There are so many choices. I tried my chances on an Arc foundation with KDE Plasma and its perfect for my needs. Most Linux environments are not only exceptionally stable, safe, and extremely customizable, but damn they are fast on older systems, too. Parrot has been my sweet spot! But you are right, you can run linux on old hardware and get amazing results. Best part is a lot of app that people love on mac/win can be used on linux or they have a free variant utility.
