Should I pan sear it before hand?

okay cool!

So, it's still cold where i'm at, normally I do it outside on the grill.
I'm concerned the grill won't get hot enough atm.

Can you recommend a high temp oil that won't smoke out my house?

I usually use butter or vegetable oil personally but my grandma always swore it had to be crisco shortening lol

Always sear before the crock.
