the steam method should work in Windows, steam is handling each installed version as a separate process so you won't need to bother with process kill etc.

my laptop is weak-ish so i have only 3 copies (i read somewhere that the max allowed instances running from same host/device is 3 ? could be wrong though... ppl often say they run 8)

p.s. make sure you are running at least 3 instances if you are after the loot, 2 players games make either no difference, or a very little difference. With 3 players the drop rate is noticeable.
I'm always using max possible (or nearly max) enchantress sitting in a1, bo barb (but rarely use it cause even max bo doesnt last as much as max enchant and cant be bothered recast every few minutes), and any physical char (e.g. bowa) become a monster

Sorry i'm confused, are you running 3 instances apart from your mains (4 total) ?

Also, i'm curious as to if i run 3 accounts total ( 3 players total in game ) and have the 2 inactive characters sit in town, will this contribute to ''no drop'' chance?

3 instances only, bought the two while on sale.
Two chars afk in A1 while the 3rd doing whatever you do. Some ppl do baalruns with few instances, one bo, one conviction pally, third Tele sorc.. barb and pally sit near the throne, while the bo-ed light sorc trash each wave with pally conviction on and with 3 mercs in total.
Better loot doesn't mean you will get fortune in a night, its just that killed monsters drop more often...
