In 2012 I was 23 and running 2 kitchens at a lake resort.
You think I can't afford your cooking? This is what I do for PRIVATE guests. You literally can not get a reservation. Word of mouth only. And cooking isn't my day job. I left the kitchen in 2013ish. Did events, bar management, became a certified sommelier. I've done michelin, I've done Forbes. I didn't go to culinary school I started in the dish pit. This is the difference between passion and a pay check employee. I'm not trying to pick on you or compare, im just saying humble the fuck up you are nothing special. You're a trade cook not a professional.
I don't have a boss. I consult for restaurants and casinos when I get a call because someone heard about me. I get 1099'd. I call the shots. I'm the boss. You're not that guy. You'll never be that guy

I don't eat/drink either of those. My palate is fine. Food that looks like "art" is complete shit. Food just needs to taste good and food doesn't have to be and shouldn't be expensive to be good.

I brought back some photos from his insta. I think its safe to say that we actually can afford to go to a low grade bistro and get an over cooked salmon with some french fries.

Typical line cook behavior. think they are a gift from god. Try walking into a restaurant in a real city. they will eat you alive.

i assume you live in some podunk town outside dallas or in the ghetto in georgia or something. idk what kind of "millionaires" would pay for this . these are the entrees you can see at any pub style restaurant with steel bar stools, playing hey-ho-stomp-clap music and 16 year old javier on the fryer

Bunch of bullshit. Grab and go things mostly. Had a meal for a hundred media people. Broc white rice teriyaki chicken. Glad to be home

i dont cook professionally but i make some stuff that i think is really good.
i will share my shrimp pasta recipe

for some reason large shrimp taste better then small shrimp? so i like to by the larger shrimp even though they cost more.
(shell them of course)
first either leave them whole or chop to desired size.
(i use medium hot heat there abouts?) hot oil and butter. or just butter? add shrimp, garlic, a little bit of finely chopped onion n spices. i try to braise the shrimp but sometimes it just seems to not want to braise
then put cooked mixture over pasta. (small size fettucine is my preference) add on top crushed red pepper to taste and grated parmesan cheese, mix all together
and serve with garlic toast.

simple and satisfying :)

use something like this if you dont want to make garlic toast
toaster oven is a great convenience for toasting something like this

Have you seen the movie The 100-Foot Journey? If yes, did you like it?
I brought up this movie because there's a lot of cooking involved.
