Cant be certain where I cooked that.
On the wellness of the fish. Old rich white people like everything well done. I imagine it is because they are depression era people and are used to eating and cooking past prime ingedients

You think I can't afford your cooking? This is what I do for PRIVATE guests. You literally can not get a reservation. Word of mouth only. And cooking isn't my day job. I left the kitchen in 2013ish. Did events, bar management, became a certified sommelier. I've done michelin, I've done Forbes. I didn't go to culinary school I started in the dish pit. This is the difference between passion and a pay check employee. I'm not trying to pick on you or compare, im just saying humble the fuck up you are nothing special. You're a trade cook not a professional.
I don't have a boss. I consult for restaurants and casinos when I get a call because someone heard about me. I get 1099'd. I call the shots. I'm the boss. You're not that guy. You'll never be that guy
