Finally something i do agree on.
I've come to realize that these types of sausages, high quality, expensive, you're not supposed to eat them raw. Slice them, heat them, a lot of fat comes off, and what's left is the flavour. I do get that now. Use it for pastas, enhance flavours in sandwhiches, anything.
