Grow your own food. If you don't have much land find yourself a patch in the forrest or buy yourself a farm.
Or move close to a food source like an ocean, river, lake where you can catch fish.
If you have your own land get a few cows, a fish farm and some chickens. That's ultimate survival off grid.

Storing a bunch of rice and beans will get you so far. You need protein

Plant protein are not complete proteins they don't have the nine essential amino acids, digestability, nutritional value that meat provides.

You might be able to live off just beans or sprouts for a year but eventually deficiencies are going to manifest.

That's why most vegans resort to popping pills just to meet basic diet requirements.
