Moose is great meat for it being so lean but its SO unforgiving to cook with.
Cooked a few moose dishes including steaks and man, 30 seconds over and its tough.

Yes. You are right. Moose meat shall be cooked no more than medium rare and preferably rare.

You ever have bear sausage? It's amazing.

I've only had bear one time from a friend and I cannot for the life of me remember what part. But was too tough AND gamey. I don't mind moose because its not gamey just lean. My favorite is elk by far. Deschutes Brewery in PDX off 11th has an elk burger that's so fucking good man. Plus good beer & garlic fries. If you haven't been I highly recommend lol

Even just ground elk is good af but candied smoked elk jerky goes crazy

I've been there once a couple years ago and had that burger and it was pretty good. I should go there again soon though. That and 10barrel brewery.
