i use stainless steel with cover only.

that way its purified; the juices and steam hold in the flavor and preserve nutrients without releasing any toxins or impurities until refined and cooled.

the standard teflon or teflon 2.0 non stick pans are essentially altars releasing all the fumes in the air.

so what youre doing is breathing in pan non stick and food particles as they burn off.

the hotter you go the more chemicals they release. the lower temperatures dont properly cook the food.

high temperature cooking is a must, thats why i use avocado and coconut oils infused into butter.

iron or even well tempered aluminum are still good options. stainless steel is the best.

if youre cooking all vegan or organic the open pan option is fine since youre releasing mostly plant based fumes.


How do you feel about carbon steel?
Also, Aluminum is no good for acidics like tomato based sauces or anything with vinegar.

if its been tempered and by that i mean blackened or used with oils and spices for a long time prior, you'll be fine.
my pans could be exceptional as they are decades old and aluminum was made a bit different back then. they have a copper bottom or lining.

carbon steel is fine the issue people complain about is the hard to clean nature. I dont have that because im not afraid of reusing a black or brown pan. neither was ancient man when he cooked.

I've never noticed acids damaging my aluminum pans, but again they are coated in a layer of char; but even before that, no issues.

the issue i notice is if they get too hot for too long the aluminum will burn off and so the pan or pot slowly looses material.

i mostly cook in very high temperatures because its yielded the best flavors and best digestion for me.

I've never thought about mixing some lime in that, that actually sounds pretty good. I'll have to try it soon.


I make DQ's flamethrower sauce with tabasco and mayonnaise.
There's more to it but it's close with those 2.
Good for burgs.

i never ate my dog. i understand some of you do on here though?
if you decided to eat it after it died, then i'd respect the moral savagery since thats the moral workaround of that sin that was also the gateway for all others, including the forbidden fruit.
