It was called that because it was the Gulf that Europeans had to cross to transport goods to and from Mexico.
These days, Mexico is a sovereign nation, and the Gulf of Mexico is widely used to ferry goods to and from both the US AND Mexico.
It's the primary gulf of the Americas. Therefore, the Gulf of America.
If Europeans want to use different names on their maps, feel free. Do you still call it Constantinople?
