Here’s a classic recipe for Moelleux au Chocolat (Chocolate Lava Cake). It’s simple, delicious, and sure to impress!
Ingredients (for 4 servings):
100 g (3.5 oz) dark chocolate (70% cocoa is ideal)
100 g (3.5 oz) unsalted butter (plus extra for greasing)
100 g (1/2 cup) granulated sugar
2 large eggs
2 large egg yolks
50 g (1/3 cup) all-purpose flour
A pinch of salt
Optional: Cocoa powder or powdered sugar for garnish
Instructions:
Preheat the Oven
Preheat your oven to 200°C (390°F). Grease 4 individual ramekins (or small ovenproof molds) with butter and lightly dust them with cocoa powder or flour. This helps the cakes release easily.
Melt the Chocolate and Butter
In a heatproof bowl, combine the chocolate and butter. Melt them together over a double boiler (or microwave in 20-second intervals, stirring each time) until smooth. Let it cool slightly.
Prepare the Batter
In a separate mixing bowl, whisk the eggs, egg yolks, and sugar together until the mixture becomes pale and slightly thick (this helps create a fluffy texture).
Combine Ingredients
Gradually fold the melted chocolate into the egg mixture. Sift the flour and salt over the batter and gently fold it in until smooth. Avoid overmixing to keep the batter light.
Fill the Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake
Place the ramekins on a baking tray and bake in the preheated oven for 8-10 minutes. The edges should be set, but the center should remain soft and slightly jiggly. Be careful not to overbake, or you’ll lose the molten center.
Cool and Serve
Let the cakes rest for 1-2 minutes. Run a knife gently around the edges and carefully invert each ramekin onto a plate. Serve immediately.
