Sounds like your shit is bugged.
Once you're home, take all your cannon pieces out of the bank, setup with whatever pieces you have, hop worlds with the cannon still setup, and then go talk to Nulodion near the dwarf mines. If you go through dialogue and tell him you lost your cannon, he'll give you one for free.

yeah, it hasnt happened again since so i think it was a bug. i wish i got a video of it to prove it but also glad it seems to be behind me.
