I stopped doing quests at like lvl 5 and have been closing rifts since.

Is there a better way to level?

I think just randomly closing rifts is the slowest possible leveling method. I think popping an xp pot and doing Instant Adventures still is the fastest way to level to 50, shouldnt take more than 2-3 days do get there from lvl 1. Saw a video with a guy who went lvl 30-50 in 2h by having a lvl 60 mate wreck elites in stillmoor for him (with use of 100% xp pot), but thats not an option for everybody.

if you have a buddy thats 60 you can pop an xp pot, zone into the highest level instance you're eligible for and stand at the entrance. you don't have to move from the entrance to get xp for every kill. this way you can go from 1-50 in a day easy.
