You can have a maximum of 3 professions per character. You can make as many characters as you want though and trade between them via the mail box (for a small price in silver/gold). I personally have butcher, outfitter, and runecrafter on my main and find them to be very useful. The reason why I say that they are very useful is because butchering allows you to skin animals and use their hides to make leather. That ability allows you to make leather clothes that help you to advance your skill level in the outfitter profession, which I personally like, because I use it to make bags for increasing my storage space on my other characters. I make silk bags (14 slot bags) that I mail to my other characters to increase my total storage space. The runecrafter profession is useful, because it allows you to scavenge items that you might not use personally for your character, but you can break items down into materials that can be used or sold. You can also make runes, which add bonuses to items, that can also be mailed to your other characters to improve their gear and help them advance more quickly. A good example of that is the +physical critical damage runes I sent to my warrior through the mail to add that damage bonus to his gear.

And you can runebreak your outfitter items you make to create mats for your runecrafting :)

Artificer is really nice for Powerstone Consumables in end game...
Apoths are nice for Consumable buff potions for end game.

Not sure who makes weapons stones.. Weaponsmiths? Idk.. I play a mage so I don't much worry about those :\

Runecrafting Apoth and Artificer are all really nice for money making in end game.
Mining will help your Artificing and Runecrafting (You can runebreak your jewelry you make I do believe)
Foraging will help your Apothecary

Really depends on what you want want to do with your crafting.
My opinion?
Pick 3 that assist your main, then when you hit max level and get a bit of gear, create a rogue alt, go 51assassin/15nightblade so you can double incapacitate + slip away, Make the rogue your Miner/forager/whatever
Make your main Artificer/Apoth/Butcher (When I was leveling, Butchering could only be maxed in an expert dungeon, don't know if this has changed)

That way you can gather plaques/recipes on your main when your running dungeons, and perma-stealth while you gather mats (Won't have to deal w/ mobs at all really)
