what type of knowledge do you propose that would allow you to claim anything for certain?

Pretty much anything and everything. We still have a lot to observe in our universe before we can claim to know any universal truths for certain.

To space and beyond of course.

2. It did have a beginning

I'm going to go with cyclical multiverses.

There is only one Universe (the totality of Existence).
