that i begin untwisting one way, but have to finish by untwisting another way?

because your making a new counter twist without untwisting the old twists. so instead of having to twist it back undue it the right number of twists and then pull apart.

no, it is still twisted even after untwisting it untill it begins retwisting, and even if u were right, how does that explain the fact that the opposite twisting opens the twist?

The twist tie is twisted both ways. This is possible because the metal in the middle of the tie is plastic (the adjective, meaning it it will retain a new shape it is given). The part close to the bag is twisted one way, it stays in place and the remaing free section of the tie is twisted the opposite direction.

This seems so simple to me, I can`t believe no one else answered it.
