If a dwarf star (not a neutron star) suddenly cooled, would it turn into a giant diamond?

It's mostly made of carbon (I think).
It has ridiculously high pressures.
Not quite enough mass to collapse in on itself like a neutron star.

Assuming we are talking about a white dwarf: no :)
Also, what would you mean by 'cooling' in the first place? A white dwarf is a star which has 'ran out of fuel' which means that there is no fusion going on anymore. The gravitational collapse is only prevented by degeneracy pressure (Pauli principle).

There are stellar objects that are considered to be diamond stars. So in case the core is mainly carbon, it could be a giant diamond.

Thing is some white dwarfs have many other elements in various abundances all the way down to iron.

Not really, this is just a hype, where popular media misinterpreted the facts . The core consists of crystallized carbon, but this is totally different from diamonds on earth. Due to the huge degeneracy pressure, there is a much denser packed lattice composed of nuclei, (not atoms).

I must correct myself: appearently the cooling rates of typical white dwarfs are so low, that appearently no 'cooled down' white dwarf (black dwarf) exists.

Yeah, this is why people are so stupid to place such a high value on diamonds. There is absoloutely nothing special about them apart from their structure, and nothing rare about them at all.
