Im not sure i understand the science behind this; but its amazing

its along the same principal as how sweating works... i think scientifically its known as evaporative cooling... the basic principal is also used widely in airconditioning
i have not done this exact thing but have done many simular things to it... one most people have prob done, is soaking your hat on a hot day to cool you off

Yep, this is right. Evaporation is a cooling process. The easiest and quickest way to experience this for yourself is if you've got an alcohol prep pad (the type doctors use right before giving a vaccine). Just wipe it on your skin and it'll start evaporating right away and you'll feel your skin cool down almost instantly.

Considering I work in a pottery this applies even more to me. I may have to start making picnic fridges D=

i still dont understand how the evaporation causes it to cool

Heat leaves the air inside the pot and goes into the water so that the water can evaporate. With less heat in the air, it gets colder.
