Combinatorics and graph theory with a good professor at the best time.

Probability theory with a mediocre professor at an inopportune but doable time.

Abstract algebra I with a mediocre professor at the least desirable time.

All of them are options, and I'm really not sure what I want to do with math, so I don't know where I'm headed yet. The combinatorics and graph theory class would fit the best, but I'm currently in a discrete math class and we're doing basic combinatorics, and I find it pretty damn boring.

probability theory will probably be the most useful of the three IMO (I assume it's like an advanced statistics course?)

you didn't state what your current aim is
is math for major or a minor? and if for a minor, what is the major?

without that informaton i can only make a general comment:
pick the subject which fits best with your goals
and if several fit equally well pick the one you find most interesting

I am a math major, with a spanish minor. I may also get a comp sci minor, but right now I find comp sci incredibly dull. I want to minor in some other science that would be useful, bio, chem, or comp sci, I have never taken much bio or chem other than general high school classes.

I really do not know what I want to get into as far as a career is concerned, but I'm fairly sure anything in finance would drive me to kill myself.

Yes, I think probability theory is a lot of statistics, which scares me a little bit because I have never taken a stats class.
