Have to make a Chemical Reaction in front of my class.

But I have to explain what makes it transform into ice. I read a bit about it, but it talked about nucleation and other shit that I couldnt understand.
Can anyone please tell me what makes it into ice .. Explain the reaction..

i dont think there is a chemical reaction

hot ice is supersaturated sodium acetate
and being so is unstable

its easier than a stable substance to force into a phase change

the crystalisation process (phase change) happens to be exothermic giving you your heat


redisolve the crystals , rinse repeat
