He will be flying at the same altitude above sea level. There, is that clear? It's not literally a straight line, but at any given time he's flying straight from the point of view of a ground observer directly underneath him.

It's called sea level because the sea is by convention considered to be at 0 altitude. It's a nice reference point.

Why do you even think the nozzle has to be tipping down in order to make the plane follow anything but a straight line?

Have you ever watched an airplane while it was landing?
