At school we got asked if there's actually a country called Greenland as no-one had ever seen it or been there, basically the point is that for stuff you can't directly experience yourselves you have to trust human knowledge otherwise none of us know anything.

^that whole video assums the curve of the earth would be the same as a hill on the earth but it works completely differently because of the direction of gravity
they mention waterways as well which definitely don't need to account for curvature in construction, with laying tracks etc it's probably just too minor to need to calculate. if you're making a few meter section of rail the curve would be minute, any deviation in the land/line would have a far lager effect

Curve on the Ball Earth means that you are on the top point of hill between any two points equal distance away from you. If you take any two distance - lets say 400 miles apart - look at the midway point - its a hill.

Or another way to think of it is that things coming toward you are going uphill and things going away from you are going downhill.
