Well the vanishing point is only for the plane we are on, the sky plane extends further and is hidden behind the optically raising earth plane.

The Earth plane only rises to the vanishing point and no further. It doesn't obscure the sky. Nothing falls below the plane of the Earth, everything goes to the horizon/vanishing point.


Also, Sauce is right. If the sun was 3000 miles up it would never even come close to being blocked by the ground. It would have to be much MUCH lower to even be blocked by a mountain.
