Of course a rocket can accelerate to 17,500 mph in 8 minutes.

Acceleration is generally in a range of 10-30 m/s2. Over the course of ~500 seconds, it's easy to come to the conclusion that a rocket can reach 7500 m/s.

if nasa lies, doesn't that mean you're also possibly lying? What you really want is for us to embrace the facts as nasa laid out in papers you can look over and if you have the cognitive ability to, verify the math yourself. The formulas and guesswork has already been done, even a high school education is enough to know how to plug them into a calculator.
