Do we? Or do we just know how to predict the effects of something we don't understand, but prefer to call gravity? For example, it took mankind quite a few years to come to the conclusion that black isn't a colour, but rather the absence of all other colours. We thought we knew that black was a colour, but it turned out it wasn't.
Still, we could paint stuff black, just as well as we can predict the movement of particles and how gravity affects them.

Also, what Derkaderk said. It's pretty much proven that compared to any of the other three fundamental forces, gravity isn't very attractive.
