The only thing we can be certain of its existence is our own mind.
We know our own mind exists because if it didn't exist we wouldn't be asking the question.
We know our mind builds models of reality because if we didn't then the word exist is meaningless.
We know our internal models of reality are affected by inputs, which will either correspond to an external reality or may be just feedback.
If the hypothesis of feedback were true it would mean that what you believe regarding reality doesn't matter.
We can therefore rationally assume that an external reality exists without having to be absolutely certain or having our assumption count against us.
PS: The double slit experiment doesn't mean what you think it means.
